Bangers and mash with mushroom gravy and garlic green beans

Peel and roughly chop potatoes then place in a pot of cold water. Bring the pot to a boil with a pinch of salt and cook for 20 minutes or until tender.

 

Bring another pot of salted water to the boil, to cook the beans later.

Once potatoes are cooked strain and allow to sit for a minute then return to the pot and mash with plant-based milk and spread. Salt to taste. Cover with a lid to keep warm while you prepare the rest of the meal.

Cook the sausage as per packet directions.

Mince garlic. Cut the tops off the beans.

In boiling water, cook the beans for 90 seconds, or until cooked. Strain. In the same pot, sauté the garlic in a little oil for 30 seconds, add the cooked beans back in and toss to coat. Season with salt and black pepper.

In a separate pot, warm the gravy on low heat stirring regularly. If it looking too thick add a little water

Serve the potatoes topped with sausage, beans and spoon over the gravy.
