Falafel burgers, herb aioli, greens, sundried tomato hummus and wedges

This is a quick recipe. The falafel mix is raw (the chickpeas are soaked, then blended) so make sure you cook them all the way through.

Instructions

Preheat the oven to 210 degrees.

Cut the potatoes into wedges.

Slice the cucumber.

Split the buns in half.

Toss the potatoes in oil and salt, line on a baking tray and bake for 20-25 minutes.

Pick the greens and wash if necessary.

Form the falafel in patties.

Heat a good splash of oil in a fry pan and cook the falafel patties until they are cooked all the way through (about 4 minutes on each side).

Heat the buns in the oven. But watch them, they’ll burn fast.

Smear hummus on the bottom and aioli on the top of the bun. Place the falafel on the bottom bun, then top with cos and cucumber.

Serve with wedges on the side and any leftover sauce.
