Hot and sour tom yum soup with edamame, fresh noodles, mushrooms and sesame

This spicy and fragrant tom yum soup is bursting with aromatic flavours.

*Coriander is a shared ingredient. Use half for each dish.

*If you have a gluten-free box, the vermicelli noodles are for this dish. Place in a bowl and cover with boiling water let sit for 5 minutes, then add to the soup right before serving.

 

 

Instructions

Bring a medium pot of water to boil with a pinch of salt.

Top and tail the onion, then thinly slice.

Cut the mushrooms into large bite-sized pieces.

Dice the tomatoes into 2 cm cubes.

Peel the carrot, then cut into thin half moons

Cut the pak choi into 3 cm strips.

Once the water is boiling, add the noodles and cook as per packet instructions. If you’re on the gluten-free plan, follow the instructions above.

Once cooked, strain, and rinse under cold water (this will prevent them from sticking).

In a medium pot, sweat the onions in a little oil for 3 minutes, until just starting to brown. Add the tomatoes and cook for another minute before adding the water and tom yum paste.

Add the mushrooms, pak choi, carrot and edamame.

Bring to a boil, then simmer for 10 minutes on low heat.

Add a little more water, if needed.

Roughly chop the coriander.

To finish, add the cooked noodles and coriander, then heat through.

Sprinkle with sesame and slurp it while it’s hot!
