Lentil bolognese, rigatoni and parmesan

Bring a medium pot of salted water to the boil add lentils and cook for 30 mins or until just cooked.
While lentils are cooking. Dice onion, mince garlic, finely chop celery and grate carrot.

In a medium pan sweat onion and celery for 2 minutes, then add garlic and sweat for another 1 minute, add tomato paste and cook for 1 minute. Add canned tomatoes, herbs and grated carrot and reduce heat. Once lentils are cooked strain and add into bolognese. Cook for another 15-20 minutes. Put a large pot of salted water to boil.

Cook pasta for 11-13mins. Strain and toss in a little olive oil.

To serve – Top pasta with bolognese, rip over basil and sprinkle over parmesan
