Samosa soup with tamarind and lime

A great winter warmer. We have subbed out the garnish in the picture for a hit of lime.

Instructions

Peel and roughly dice the carrot, onion and potatoes.

Mince the garlic.

In a medium pot, sweat the onions, garlic and carrots for 3 minutes in a little oil. Add a pinch of salt.

Add the spice mix and fry for 30 seconds.

Add the water and potatoes, then simmer for 20 minutes, or until the potatoes are fully cooked.

Open, strain and rinse the lentils.

Once the potatoes are cooked, blend the soup adding more water, if necessary.

Once blended, return to the pot, add the lentils and peas. Gently warm for 5 minutes, taste and adjust seasoning.

Serve soup with a drizzle of tamarind sauce squeeze of lime.
